Ingredients

6 servings
  • 2 pounds boneless skinless chicken thighs
  • ⅓ cup chopped fresh cilantro
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 1 ½ tablespoons soy sauce
  • 1 ½ tablespoons fish sauce
  • 1 ½ tablespoons olive oil
  • 1 ½ tablespoon brown sugar
  • chopped cilantro for garnish
  • Optional veggies: red and green bell peppers, snow peas and carrots

Steps

  1. In a small bowl combine ⅓ cup chopped fresh cilantro, 1 tablespoon minced ginger, 1 tablespoon minced garlic, 1 ½ tablespoons soy sauce , 1 ½ tablespoons fish sauce, 1 ½ tablespoons olive oil and 1 ½ tablespoon brown sugar.

  2. Add the 2 pounds boneless skinless chicken thighs to a ziplock bag and marinate for 3 hours or overnight.

  3. Preheat the grill to medium high heat. Grill the chicken about 3-4 minutes each side or until cooked throughout and no longer pink.

  4. Serve over grilled veggies if desired. Garnish with chopped cilantro for garnish and Optional veggies: red and green bell peppers, snow peas and carrots .
