Spicy Pork Bulgogi Sliders
These Korean-inspired sliders feature flavorful pork, kimchi slaw and wasabi mayo for a spicy snack this football season. Don't worry, the spiciness doesn't overwhelm the subtle sweet flavors of the red pepper paste!

Ingredients
- 2 packs slider buns
- Sriracha (optional)
- 1 lb pork tenderloin, very thinly sliced
- 3 g arlic cloves, crushed
- ¼ cup soy sauce
- 2 sprigs green onion, chopped
- 1 yellow onion, sliced
- 2 teaspoons sesame oil
- 2 teaspoons freshly grated ginger
- 1 tablespoon brown sugar
- 1/4 cup red pepper paste (gochujang or kochujang)
- ¼ teaspoon ground black pepper
- ½ head cabbage, thinly sliced
- ¼ red onion, thinly sliced
- ¼ cup green onion, sliced
- 1 carrot, sliced (or ready-shredded carrots)
- ¼ cup rice vinegar
- 1 tablespoon fish sauce
- ½ tsp ground ginger
- 1 clove garlic, minced
- 2 tsp sriracha
- ¼ cup water
- 1 tablespoon sugar
- 1 cup mayonnaise
- 2 cloves crushed garlic
- 2 teaspoons prepared wasabi
Steps

In a large bowl or sturdy bag, mix all of the pork ingredients together. Refrigerate for at least 1 hour, or overnight.

In a large pan over medium-high heat, cook the pork until it is well done and browned.

In a large bowl or plastic container, combine all of the kimchi slaw ingredients. Toss, cover, and then shake to make sure everything is coated. Refrigerate for at least 1 hour before serving, or overnight.

Combine all ingredients in small bowl. Cover and refrigerate until ready to use.

Generously pile the pork on the sliders, top with a bit of the Kimchi Slaw, and spread the wasabi mayo on the top bun. Serve with Sriracha on the side for those who like theirs extra spicy!
