- Make chicken oil: Take about 50 grams of chicken skin and fat, fry in 100 ml of oil, over low heat, until fragrant. Add chopped garlic, continue cooking until golden brown, turn off the heat. Cool then strain. Onion chicken oil is ready to use.
- Heat oil, saute ground spices, bay leaf, galangal, lemongrass, ginger and lime leaves until fragrant. Add some water, cook until it boils.
- Add the chicken and spring onions, cook until the chicken changes color. Add the remaining water, season with salt, pepper, brown sugar, sweet soy sauce, light soy sauce, oyster sauce, stock powder and sesame oil, stir well, cover the pan, cook until the chicken is cooked and the spices are absorbed. Check the taste, then remove from heat. Chicken topping is ready to use.
- Make broth: Bring water to a boil, add chicken bones, sauteed garlic, ginger, boil until the broth smells good. Add the meatballs, season with salt, pepper, stock powder, adjust the taste, remove from heat, discard the chicken bones. Add sliced spring onions before serving.
- Solution: boil water, boil caisim and noodles until desired doneness, drain. In a bowl, add 2 tsp of onion chicken oil, a little salt and pepper, 1 tbsp of sauce from the chicken topping, stir with chopsticks. Add the boiled noodles, stir well until the noodles are coated with spices. Add caisim stew, chicken topping, meatballs and sauce, sliced spring onions, sprinkle with fried onions. Serve with pickled cucumber, sweet soy sauce, chili sauce and chili sauce according to taste
