Soft & Moist Carrot Muffins
These Carrot muffins are moist, flavorful, and full of warm spices!

- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 2 teaspoons cinnamon
- ½ teaspoon salt
- 1 cup granulated sugar
- 1 cup vegetable oil
- 3 eggs
- 2 cups shredded carrot
- 1 apple (peeled and shredded)
- ½ cup raisins
Steps
Preheat oven to 375°F. Greased or line muffin tins.
In a large bowl whisk together flour, baking powder, cinnamon, and salt.
Whisk sugar, oil, and eggs in a separate bowl.
Stir wet mixture into dry mixture just until combined.
Lightly fold in carrots, apples and raisins.
Divide the mixture into prepared muffin tins.
Bake for 25-29 minutes or until tops are golden and a toothpick comes out clean.
