Ingredients

4 servings
  • 1 pound baby potatoes (or yukon gold or red potatoes, cut into 1" pieces)
  • 1 pound smoked sausage (cut in ½" slices)
  • 1 red bell pepper (or green, diced)
  • ½ medium zucchini (cut in ½" slices)
  • ½ red onion (cut in ½" pieces)
  • 2 tablespoons olive oil
  • 1 ½ teaspoons red wine vinegar
  • ½ teaspoon Dijon mustard
  • ½ teaspoon dried basil
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon black pepper
  • 1 clove garlic (minced )

Steps

  1. Preheat oven to 425°F.

  2. Combine the dressing ingredients in a small bowl.

  3. Toss potatoes with 1 tablespoon of the dressing mix.

  4. Bake 20 minutes. Meanwhile, toss remaining ingredients with the remaining dressing.

  5. Add to the pan and mix well. Increase heat to 450°F and roast an additional 15 to 20 minutes or until vegetables are tender. Broil for 2 minutes or until golden.
