Roasted Sausage and Potatoes
With sausage, potatoes, & veggies in a tangy dressing, this sheet pan dinner is a tasty weeknight dinner.

- 1 pound baby potatoes (or yukon gold or red potatoes, cut into 1" pieces)
- 1 pound smoked sausage (cut in ½" slices)
- 1 red bell pepper (or green, diced)
- ½ medium zucchini (cut in ½" slices)
- ½ red onion (cut in ½" pieces)
- 2 tablespoons olive oil
- 1 ½ teaspoons red wine vinegar
- ½ teaspoon Dijon mustard
- ½ teaspoon dried basil
- ½ teaspoon salt (or to taste)
- ¼ teaspoon red pepper flakes
- ¼ teaspoon black pepper
- 1 clove garlic (minced )
Steps
Preheat oven to 425°F.
Combine the dressing ingredients in a small bowl.
Toss potatoes with 1 tablespoon of the dressing mix.
Bake 20 minutes. Meanwhile, toss remaining ingredients with the remaining dressing.
Add to the pan and mix well. Increase heat to 450°F and roast an additional 15 to 20 minutes or until vegetables are tender. Broil for 2 minutes or until golden.
