Ingredients

4 servings
  • ½ cup peanut butter
  • ½ cup agave
  • 2 tablespoons coconut oil (melted)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups old fashioned oats
  • 1 cup chopped peanuts

Steps

  1. Preheat the oven to 325°F.

  2. Line a baking sheet with parchment paper and set it aside.

  3. In a medium-sized microwave-safe bowl, whisk together peanut butter, agave, melted coconut oil, salt, and vanilla.

  4. Microwave for 20 seconds and whisk again.

  5. In a large mixing bowl, mix together oats & nuts until fully combined.

  6. Pour the peanut butter mixture into the oat mixture and fold together using a rubber spatula, covering all pieces of nuts and oats.

  7. Spread the granola evenly on the prepared baking sheet and bake for 20 minutes.

  8. Remove from the oven, rotate the granola, and return to the oven for 10 minutes.

  9. Remove from the oven and let cool for 1 to 2 hours.
