Ingredients

6 servings
  • 3 large eggs
  • 3/4 cup buttermilk, (warmed)
  • 3/4 cup milk, (warmed)
  • 1/2 cup (1 stick) unsalted butter, (melted)
  • 1 medium peeled, cored and grated Granny Smith apple
  • 1 1/2 cups whole wheat pastry flour or all purpose flour
  • 1/2 cup granulated white sugar
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped toasted pecans, (optional)

Steps

  1. Preheat the waffle iron. In a large bowl, whisk together the eggs, buttermilk, milk and butter. Stir in the apple. In another bowl, whisk together the flour, sugar, spice, baking powder, baking soda and salt. Add the flour mixture to the egg mixture; whisk until smooth (some small lumps are okay).

  2. Sprinkle 2 tablespoons pecans (if using) onto the waffle iron. Pour about 2/3 cup batter over the pecans. Cook the waffles until golden brown, about 5 minutes. Keep warm in 200°F. oven while cooking the remaining waffles.

  3. Serve with warmed maple syrup, if desired.
