Parmesan Roasted Sweet Potatoes
Parmesan roasted sweet potatoes are so delish! Sweet potatoes are tossed in oil, garlic, & parmesan, then oven-roasted until crispy on the outside & fluffy on the inside!

Ingredients
4 servings
- 1 ½ pounds sweet potatoes (about 2 medium)
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- ¼ cup shredded Parmesan cheese
- 2 sprigs fresh thyme (or ¼ teaspoon dried thyme leaves)
- salt and pepper to taste
Steps

Preheat the oven to 400°F. Line a baking sheet with parchment paper.

Peel the sweet potatoes and cut into ½" cubes.

Toss the potatoes with remaining ingredients and spread onto the parchment paper.

Bake 25-30 minutes stirring after 15 minutes. Broil 1 minute if desired.
