Ingredients

  • 1/2 cup Butter (or coconut oil)
  • 2/3 cup light brown sugar (packed)
  • 1/3 cup natural sweetener (or sugar of choice)
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1/2 cup Nutella (warmed for 30 seconds in microwave)
  • 3/4 cup spelt, plain or all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup raspberries (fresh or frozen)
  • 1/2 cup blueberries (fresh or frozen)
  • 1/2 cup semi sweet or dark chocolate chips

Steps

  1. Preheat oven to 350℉ | 175℃ and spray a 8-inch pan with cooking oil spray. Line with parchment/baking paper and set aside.

  2. In a large mixing bowl, mix the melted butter or coconut oil and sugar. Add eggs and whisk well until combined.

  3. Sift the flour and cocoa powder into the wet mixture, and slowly mix with a wooden spoon until just combined. Do not beat the batter.

  4. Gently fold through the berries and chocolate chips.

  5. Pour the batter into the prepared pan and bake for 15-20 minutes or until the brownies appear set around the edges and slightly firm to the touch in the middle. A toothpick inserted into the centre will come out dirty, but the brownies will continue to bake as they sit in the pan and will firm up as they cool.

  6. Allow to cool for 10 minutes before slicing. Option to dust with icing sugar before serving.

  7. Serve with extra berries and scoop of vanilla ice cream!
