Instructions
- In a bowl, mix powdered sugar, eggs and coconut milk. Mix well using a whisk/shaker.
- Add flour then knead until smooth.
- Add margarine. Knead again until smooth. Roll up the dough then cover with plastic wrap. Rest for 20 minutes.
- Take the dough then roll it out thinly to around 1/2 cm thickness with a rolling pin/roller. Cut into pieces 1/2 cm wide and 20 cm long.
- Take a sheet of dough and hold the two ends with both hands. Twist it in the opposite direction then bring the two ends together while pressing/gluing (so it doesn't come off easily when frying). Do this until the dough runs out.
- Heat lots of oil. Fry the mine cakes over medium-low heat until cooked and brown. Lift and drain. Cool.
- Ready to serve or store in an airtight container.
- Use medium to low heat so that the cake cooks evenly so it is crispy and durable.
