Instructions

  1. In a bowl, mix powdered sugar, eggs and coconut milk. Mix well using a whisk/shaker.
  2. Add flour then knead until smooth.
  3. Add margarine. Knead again until smooth. Roll up the dough then cover with plastic wrap. Rest for 20 minutes.
  4. Take the dough then roll it out thinly to around 1/2 cm thickness with a rolling pin/roller. Cut into pieces 1/2 cm wide and 20 cm long.
  5. Take a sheet of dough and hold the two ends with both hands. Twist it in the opposite direction then bring the two ends together while pressing/gluing (so it doesn't come off easily when frying). Do this until the dough runs out.
  6. Heat lots of oil. Fry the mine cakes over medium-low heat until cooked and brown. Lift and drain. Cool.
  7. Ready to serve or store in an airtight container.
  8. Use medium to low heat so that the cake cooks evenly so it is crispy and durable.
