Ingredients

6 servings
  • 6 medium size yellow or red potatoes (about 2-2½ pounds worth)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt (adjust to taste)
  • ½ teaspoon freshly ground black pepper (adjust to taste)

Steps

  1. Preheat oven to 400°F. Scrub and rinse the potatoes. Cut them into slightly smaller than bite-size pieces, about ½-inch. Place them on a large baking sheet and drizzle a couple of tablespoons of olive oil over them. Toss with your hands to thoroughly coat the pieces. Spread them across the baking sheet.

  2. Roast for 40-45 minutes, stirring once after 20 minutes. Check them again around 40 minutes and stir or turn as needed. Let them get soft and then a bit crispy before removing them from the oven.

  3. Serve hot or allow the potatoes cool completely and then store them in an airtight container in the refrigerator until ready to use.
