Ingredients

  • 2 large eggs
  • ¾ cup granulated white sugar
  • 1 cup (about 3 medium) mashed ripe bananas
  • ⅓ cup buttermilk
  • 1 tablespoon vegetable or canola oil
  • 1 tablespoon vanilla extract
  • 1¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Steps

  1. Preheat oven to 325°F. Lightly spray a 8x5-inch loaf pan with nonstick spray and dust with flour.

  2. In a large bowl, use an electric mixer to beat the eggs and sugar until thick and light, about 5 minutes. Mix in the bananas, buttermilk, oil and vanilla.

  3. Sift the flour, baking powder, baking soda and salt over the wet mixture; beat just until blended. Transfer the batter to the prepared pan.

  4. Bake the bread until golden brown on top and a tester inserted into the center comes out clean, about 1 hour. Turn the bread out onto a rack and cool.
