Ingredients

  • 2 cups granulated white sugar
  • 1 cup (2 sticks) unsalted butter, (at room temperature)
  • 3 cups mashed ripe bananas ((about 6 medium))
  • 4 large eggs, (well beaten)
  • 2 ½ cups cake flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt

Steps

  1. Preheat the oven to 350°F. Lightly spray two 9-inch loaf pans with nonstick spray.

  2. In a large bowl, use an electric mixer to combine the sugar and butter until light and fluffy. Add the bananas and eggs, beating until well-mixed.

  3. Sift together the dry ingredients three times. Add the banana mixture and mix just until moistened. Do not over mix.

  4. Divide the batter between the two prepared pans. Bake 45 minutes to 1 hour, until firm in the centers and the edges begin to separate from the pans.

  5. Cool on a rack for 10 minutes before removing from pans.
