Ingredients

  • 1 lb (500g) carrots (tops trimmed and skin peeled (two bunches carrot tops))
  • 2 tablespoons butter (melted )
  • 2 cloves garlic (minced)
  • salt (to taste)
  • freshly cracked black pepper
  • 2 teaspoons parsley leaves (finely chopped )
  • 2 tablespoons honey ( or maple syrup or to taste)

Steps

  1. Preheat the oven to 400°F (207°C).

  2. Toss the carrots with the melted butter, garlic, a large pinch of salt, black pepper, parsley, and honey in a large bowl. Then, transfer them to a baking sheet lined with parchment paper.
