Ingredients

4 servings
  • 3 g reen onions (divided)
  • 1 tablespoon vegetable oil
  • 1 pound boneless skinless chicken thighs (or chicken breast cutlets)
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • cooked rice (and green beans, for serving)
  • toasted sesame seeds (for garnish)
  • 3 tablespoons hoisin sauce
  • ¼ cup water
  • 1 tablespoon rice vinegar
  • ½ tablespoon less sodium soy sauce
  • ½ teaspoon sesame oil

Steps

  1. Thinly slice the green onions, dividing the whites and greens.

  2. In a small bowl, combine hoisin, water, vinegar, soy sauce, and sesame oil. Set aside.

  3. Season the chicken with garlic powder, salt and pepper.

  4. Heat oil in a skillet over medium-high heat. Add the chicken and cook for 3 to 4 minutes. Flip it over and cook an additional 3 to 4 minutes or until cooked through. Transfer the chicken to a cutting board to rest.

  5. Add the whites of the green onions to the skillet and cook for 1 minute. Add the sauce to the skillet and simmer for 2 to 3 minutes until slightly thickened. While simmering, slice the chicken into strips and add to the skillet with any juices. Toss to coat and cook for 2 to 4 minutes until the sauce is thickened and the chicken is hot.

  6. Serve over rice and garnish with the greens of the green onion and toasted sesame seeds.
