Ingredients

12 servings
  • ¼ cup refined coconut oil, (melted)
  • ¼ cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ¾ cup whole wheat flour
  • ½ cup unsweetened cocoa powder
  • ½ cup granulated white sugar
  • ¼ cup chocolate chips

Steps

  1. Preheat the oven to 350℉. and line an 8x8 inch pan with foil or parchment paper. Grease lightly with non stick spray.

  2. In a large bowl, whisk together the coconut oil, applesauce, vanilla and eggs.

  3. Stir in the flour, cocoa powder, and sugar until combined completely.

  4. Spread into the prepared pan, sprinkle chocolate chips on top, and bake for 14 to 16 minutes or until a toothpick in the center comes out almost clean. The brownies will still be glossy on top in the middle, but look dry at the edges and the toothpick may have some moist crumbs.

  5. Cool on a wire rack to room temperature before slicing.
