Ingredients
- ½ cup rolled oats ((regular or quick))
- 2¼ cups all purpose flour
- ½ teaspoon salt
- ¼ teaspoon ground cinnamon
- 1 cup (2 sticks) butter, (at room temperature)
- ¾ cup packed brown sugar
- ¾ cup granulated white sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- ¾ cup chocolate chips
- 1½ cups chopped walnuts or pecans ((optional))
Steps

Preheat oven to 350°F. Cover 2 baking sheets with parchment paper or silpat mats.

Place rolled oats in blender or food processor and process until finely ground. Combine ground oats, flour, baking soda, salt and cinnamon in mixing bowl.

In another bowl, use an electric mixer to combine the butter, sugars and vanilla. Add the eggs, and beat until fluffy.

Stir the flour mixture into the egg mixture, blending well. Add the nuts (if using) to the dough and mix well. Using a heaping tablespoonful for each cookie, scooping round balls, and place 2½-inches apart on the prepared baking sheets.

Bake until the cookies are lightly browned, 10 to 12 minutes. In a small cup, melt ¼ cup chocolate chips in the microwave. Place 3 chocolate chips on top of each cookie for the spider bodies as they come out of the oven, and use a piping bag to pipe melted chocolate on for the legs. Let the spider cookies cool completely on wire racks.
