Ingredients

4 servings
  • 1 ½ pounds boneless skinless chicken thighs (or chicken breasts)
  • ¼ cup orange juice
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons ketchup
  • 2 g reen onions (sliced)
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon rice wine (optional)
  • 1 clove garlic (minced)

Steps

  1. To make the marinade, in a medium bowl, whisk together orange juice, soy sauce, honey, ketchup, green onion, ginger, rice wine, and garlic.

  2. If using chicken breasts, pound to ½-inch thickness with the flat side of a meat mallet. Chicken thighs do not need to be pounded.

  3. Marinate the chicken for at least 2 hours or overnight.

  4. Preheat the grill to medium-high heat. Remove the chicken from marinade, let excess drip off, and discard any marinade.

  5. Grill the chicken 5 to 7 minutes per side or until cooked through and no pink remains (165°F).
