Ingredients

  • 1 pound spaghetti
  • ¾ English cucumber (diced)
  • 1 pint grape tomatoes (halved)
  • 1 cup bell pepper (any color, diced)
  • ¼ cup sliced pitted olives (black olives or kalamata olives)
  • ⅓ cup crumbled feta cheese (more to taste)
  • ¼ cup diced red onion
  • 1 tablespoon chopped fresh parsley
  • 1 cup Greek salad dressing
  • ¼ cup red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon honey
  • ½ teaspoon garlic powder
  • ⅓ cup olive oil

Steps

  1. If making homemade dressing, combine all ingredients except oil in a bowl. Slowly drizzle oil while whisking. Set aside.

  2. Cook spaghetti in a large pot of salted water until al dente according to package directions. Drain and rinse under cold water.

  3. Combine all ingredients in a large bowl. Add dressing and toss.

  4. Refrigerate at least 2 hours before serving.
