Ingredients

4 servings
  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon ground nutmeg
  • 2 large eggs, (lightly beaten)
  • 2 cups eggnog
  • ¼ cup vegetable or canola oil

Steps

  1. In a large bowl, whisk together the flour, baking powder, salt and nutmeg. In a separate bowl, whisk together the eggs, eggnog and oil. Pour this mixture into the dry mixture and stir together until slightly lumpy.

  2. Heat a griddle or large skillet over medium heat, then spray with nonstick spray. For each pancake pour ¼ cup batter onto the griddle. Cook until golden; turn when tops are bubbly and edges are slightly dry (1 to 2 minutes per side). Serve with warm maple syrup.
