Ingredients

  • 3 medium bananas (about 1 cup mashed)
  • ½ cup mayonnaise (or dressing)
  • 1 egg (room temperature)
  • 1½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup chopped pecans (optional)

Steps

  1. Preheat the oven to 350°F. Grease an 8x4-inch loaf pan and set aside.

  2. Mash the bananas with a fork. In a medium bowl, combine mashed bananas, mayonnaise, and egg. In a separate large bowl, combine flour, sugar, baking soda, salt, and pecans if using.

  3. Combine the wet and dry ingredients and stir just until combined. Note: The mixture will be very thick, but do not overmix.

  4. Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick comes out clean.
