Ingredients

  • 2½ cups chopped dates
  • 1½ cups boiling water
  • 1½ teaspoons baking soda
  • 1¾ cups all purpose flour
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¾ cup honey
  • 2 tablespoons butter, (at room temperature)
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1½ cups coarsely chopped walnuts or pecans

Steps

  1. Preheat the oven to 350℉. Grease and flour a 9x5-inch loaf pan.

  2. Place the dates in a large bowl. Combine the boiling water and the baking soda, and then pour over the dates in the bowl.

  3. In a separate bowl, whisk together the flour and the spices.

  4. In a large bowl, use an electric mixer to combine the honey and the butter. Beat in the egg and vanilla. Add the dry ingredients alternately with the dates and water. Stir in the nuts.

  5. Scrape the batter into the prepared pan. Bake 65 to 75 minutes, or until a toothpick inserted into the center comes out clean. Cool for about 15 minutes in the pan, and then turn the loaf onto a wire rack to cool completely.
