Ingredients

  • ½ cup all-purpose flour
  • ¾ cup cornmeal
  • ½ teaspoon baking soda
  • ¾ teaspoon baking powder
  • ¾ teaspoon salt
  • 2 teaspoons white sugar
  • ¾ cup buttermilk
  • 1 egg
  • 3 tablespoons butter (melted and cooled)
  • 1 cup sharp cheddar cheese
  • ¾ cup chopped cooked bacon

Steps

  1. In a medium mixing bowl, combine the flour, corn flour, baking soda, baking powder, salt, and sugar. In a separate small bowl, whisk together the buttermilk, egg, and butter. Mix the wet ingredients into the dry until just combined, then fold in the cheddar cheese and bacon.

  2. Pour batter onto the hot waffle iron and cook until lightly browned. When finished cooking, transfer the waffles to a wire rack on the counter.
