Ingredients

  • 1 cup (2 sticks) butter, (at room temperature)
  • 1½ cups granulated white sugar
  • 2 large eggs, (at room temperature)
  • ½ cup plain yogurt
  • 1 teaspoon vanilla extract
  • 2½ cups all purpose flour
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups shredded zucchini
  • 6 tablespoons butter, (at room temperature)
  • 2⅔ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • ¼ to ⅓ cup 2% milk

Steps

  1. Preheat the oven to 350°F. Spray a 13x9-inch pan with nonstick spray.

  2. In a large bowl, use an electric mixer to combine the butter and sugar until light and fluffy. Add in the eggs, one at a time, beating well after each addition. Beat in the yogurt and vanilla.

  3. In a separate bowl, whisk together the flour, cocoa, baking soda and salt. Gradually beat the flour mixture into the wet ingredients. Then stir in the zucchini.

  4. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean. Let the brownie cake cool.

  5. In a large bowl, use an electric mixer to combine the butter and powdered sugar until light and fluffy, 5 to 7 minutes. Beat in the cocoa and vanilla. Add enough milk for the frosting to achieve spreading consistency. Spread the frosting evenly over the brownie cake. Cut into pieces to serve.
