Ingredients

  • ½ cup salsa
  • 3 cups cooked shredded chicken (or beef)
  • 1 ½ cups shredded Monterey jack cheese
  • 1 tablespoon taco seasoning
  • 12 (6-inch each) corn tortillas
  • ⅓ cup oil (for frying or to brush with)

Steps

  1. Place salsa in a fine strainer and let any juices drip away.

  2. In a bowl, combine chicken, drained salsa, cheese, and taco seasoning.

  3. Place tortillas on a plate, cover with a damp paper towel, and microwave for 40 seconds or until warm.

  4. Spoon 2 tablespoons of the filling onto each tortilla and roll tightly. Secure with a toothpick and place on a baking sheet, seam side down. Repeat with the remaining filling and tortillas.

  5. Preheat oil in a pan over medium-high heat (350°F).

  6. Add the taquitos a few at a time, and cook until crispy, about 3-5 minutes.

  7. Drain on paper towels and serve warm.
