Ingredients

  • 1 pound boneless skinless chicken breast
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • ½ cup pickle juice
  • 1 lemon (zest & juice)
  • 1 teaspoon olive oil
  • 1 ½ cups egg whites
  • ¼ teaspoons kosher salt (divided)
  • 4 light multi-grain English muffins
  • 4 slices cheddar cheese ( or American cheese (2 ounces))

Steps

  1. At least 2 hours prior to cooking or up to 8 hours (suggested), pound the chicken breast to make it an even 1/4 inch thickness. Cut the breasts in half to make 4 pieces (the size of the muffins). Marinate chicken in pickle juice, onion powder, garlic powder, lemon & olive oil at least 2 hours or as long as 8.

  2. Preheat oven to 350F and spray an 8” x 8” glass square baking dish (or nonstick, silicone) with olive oil spray.

  3. In a large bowl, beat the egg whites with salt. Transfer to the prepared pan and bake for about 20 to 22 minutes, or until set.

  4. Allow to cool in pan for 5 minutes then slice into 4 equal squares. Alternatively, you can cut the eggs into 4 rounds, using a 3-¾ inch diameter cookie cutter.

  5. Meanwhile, heat a grill or grill pan to medium-high heat. Grill the chicken for about 3-4 minutes on each side, or until browned and the internal temperature reaches 165°F (74°C). Be careful not to overcook them, as chicken can become dry if cooked too long & these will be reheated for meal prep.

  6. While the chicken/eggs are cooking, lightly toast each muffin. If you will be reheating the meal-prep in a microwave, you can go for a slightly longer toast.

  7. To assemble sandwiches: Toast the English muffin to desired doneness. Place one egg square (or circle) on ½ the English muffin, top each with chicken, ½ ounce of cheese and top with remaining half muffin.
