Ingredients

2 servings
  • 1¼ cups old-fashioned rolled oats
  • 3 tablespoons brown sugar
  • ½ teaspoon baking powder
  • ⅛ teaspoon kosher salt
  • ¼ teaspoon cinnamon
  • dash of nutmeg
  • ⅓ cup raisins
  • 1 egg
  • 2 tablespoons light flavored olive oil
  • ½ cup milk

Steps

  1. Preheat oven to 350°F. Grease (2) 10-12 ounce ramekins or (4) 5-6 ounce ramekins with butter and set aside.

  2. Divide the oatmeal mixture between the ramekins. Bake for about 20 minutes, until the oatmeal is lightly browned and a knife inserted into the center should come out mostly clean.

  3. Let rest for a few minutes before serving. The oatmeal will be very hot!
