Ingredients

8 servings
  • 2 cups all-purpose flour *
  • 1 teaspoon kosher salt
  • 4 teaspoons baking powder
  • 1 1/2 cups milk
  • 2 eggs
  • 6 tablespoons butter (melted)
  • 1 1/2 cups shredded Mexican cheese blend
  • 1/2 cup chopped green chile
  • 2/3 cup cooked and crumbled bacon
  • Rosemary Sausage Gravy ((optional))

Steps

  1. Preheat the waffle iron. Stir together the flour, salt, and baking powder. Add the milk and eggs. Whisk to combine. Stir in the butter. Add the cheese, the green chile, and the bacon and stir once more.

  2. Pour batter onto the hot waffle iron and cook until lightly browned. When finished cooking, transfer the waffles to a wire rack on the counter.

  3. Serve the waffles handheld or with an egg and/or sausage gravy on top. Enjoy!
