Ingredients

  • 2½ cups water
  • 1 cup milk
  • 4 tablespoons brown sugar (more to taste)
  • 1 teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 1 ½ cups old fashioned oats
  • 1 cup shredded carrot
  • ¼ cup golden raisins
  • ¼ cup chopped walnuts (extra for topping)
  • 1 tablespoon butter
  • 2 ounces cream cheese (softened)
  • ⅓ cup vanilla yogurt
  • ¼ teaspoon cinnamon

Steps

  1. In a medium saucepan over medium heat, bring water, milk, brown sugar, cinnamon, vanilla extract, and salt to a boil. (Keep an eye on it to ensure it doesn't boil over)

  2. Add the oats, carrots, and raisins, reduce the heat to medium low, and let simmer for 18 to 21 minutes stirring frequently so the milk doesn't burn.

  3. While the oatmeal is cooking, in a small bowl whisk the cream cheese until fluffy and smooth. Gradually add the yogurt, stirring after each addition. Stir in the cinnamon.

  4. Remove the oats from the heat and stir in walnuts and butter. Top with the cream cheese and additional walnuts if desired.
