  • 2 tablespoons kosher salt
  • 2 tablespoons granulated white sugar
  • 1 tablespoon grated lemon zest
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh sage
  • Four 4-ounce (about ½-inch thick) bone-in center-cut pork chops
  • 2 teaspoons freshly ground black pepper

Steps

  1. Combine all brine ingredients in a large zip-top plastic bag; shake well to dissolve the salt and sugar.

  2. Add the pork chops; seal and refrigerate overnight, turning the bag occasionally.

  3. Remove the pork chops from the bag; discard the brine. Pat the pork chops dry with a paper towel. Sprinkle with pepper.

  4. Preheat your grill. (Or heat a large nonstick grill pan over medium-high heat and spray with nonstick spray). Add the pork chops; grill 3 to 5 minutes on each side or until desired degree of doneness.
