Blueberry Waffles

- 1 ⅓ cup fresh blueberries
- 2 cups all-purpose flour (+ 1 tablespoon)
- 2 tablespoons granulated sugar
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups buttermilk
- 2 eggs (separated)
- ⅓ cup melted butter
- ¼ teaspoon almond extract (or 1 teaspoon vanilla extract)
Steps
Preheat waffle iron according to manufacturer's directions. Toss blueberries with 1 tablespoon flour and set aside.
Combine dry ingredients in a medium bowl.
In a separate bowl, mix buttermilk, egg yolks, butter, and extract. Set aside.
Place egg whites in a stand mixer and beat on medium-high speed until stiff peaks form.
Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites. Fold in blueberries.
Grease waffle iron and drop batter, close the lid and cook 3-5 minutes or until golden.
