Blender Chocolate Chip Oatmeal Zucchini Muffins
Naturally sweetened, one-bowl muffins made with oats, zucchini, and melty dark chocolate!

- 1 1/2 cups shredded zucchini ((2 small))
- 1 1/2 cups old fashioned oats
- 1/2 cup whole wheat flour ((or additional oats))
- 2 tablespoons shelled hemp seeds ((optional))
- 1/2 cup pitted Medjool dates
- 1/4 cup pure maple syrup
- 1 stick (8 tablespoons) salted butter, melted
- 2 eggs
- 1 tablespoon vanilla extract
- 1 1/2 teaspoons baking soda
- 1 teaspoon sea salt
- 1 cup dark chocolate chips
Steps
1. Preheat the oven to 350°F. Line 14 muffin tins with paper liners.2. In a blender, combine all ingredients, except the chocolate. After blending, mix in the chocolate chips.3. Divide the batter among muffin tins. Bake for 18-22 minutes, until just set. Add flaked sea salt, if desired. Enjoy!
