Ingredients

36 servings
  • 1 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 3/4 cup (1½ sticks) unsalted butter, (at room temperature)
  • 1/2 cup granulated white sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1½ teaspoons vanilla extract
  • 1/2 cup mashed ripe banana
  • 1 cup old fashioned rolled oats
  • 8 ounces semisweet chocolate chips
  • 1/2 cup walnuts, (toasted and chopped)

Steps

  1. Preheat the oven to 375 degrees F. Line baking sheets with parchment paper (or silpat), or spray with nonstick spray.

  2. In a medium bowl, whisk together the flours, salt and baking soda.

  3. In a large bowl, use an electric mixer to beat the butter and sugars; mix on medium speed until pale and fluffy. Reduce the speed to low and add the egg and vanilla; mix until combined. Mix in the banana. Add the flour mixture; mix just until combined. Stir in the oats, chocolate chips and walnuts.

  4. Drop the dough by heaping tablespoonful onto the prepared baking sheets (or use a cookie scoop), spacing about 2 inches apart. Bake the cookies until golden brown and just set, 12 to 13 minutes. Let them cool on the cookie sheets for 5 minutes. Then transfer the cookies to wire racks; let cool completely.
