Banana Waffles
If you love banana bread even half as much as my family does, I promise that you will love these easy Banana Waffles!

- 3 small ripe bananas (1 cup mashed)
- 3 eggs
- 1½ cup buttermilk (store-bought or homemade is fine here)
- 1½ teaspoons vanilla extract
- ¼ cup light brown sugar
- 2½ cups all-purpose flour*
- ¼ cup cornstarch
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon kosher salt
- ¼ teaspoon nutmeg
- ¼ cup butter (melted)
- 1½ cups brown rice flour
- ⅔ cup tapioca starch
- ⅓ cup potato starch
Steps
Preheat your waffle iron. Combine the bananas, eggs, buttermilk, vanilla, and brown sugar in a bowl and whisk until smooth. (You can also combine in a blender and pulse smooth.)
Combine the flour, cornstarch, baking powder, baking soda, salt, and nutmeg in a mixing bowl and whisk to combine. Add the wet ingredients and stir until well mixed. Stir in the melted butter.
Pour batter onto the hot waffle iron and cook until crisp and browned. Serve with the toppings of your choice. Enjoy!
