- In a bowl, mix flour, baking powder, baking soda, vanilla, salt while sifting. Mix well then set aside.
- In another bowl, beat the eggs and granulated sugar until the sugar dissolves. Pour in melted margarine then stir well. Finally, for the wet mixture, add the mashed banana. Mix well.
- Add the wet mixture to the dry ingredients mixture. Stir again enough to make it even. Don't stir for too long. It doesn't matter if there are still a few lumps.
- Prepare a baking sheet or muffin tin. Spread thinly with margarine.
- Pour the mixture into the pan. Fill only ¾ full in each mold.
- Sprinkle cashew nuts as topping on top.
- Bake in the oven at 180ºC for 30 minutes. Remove and cool.
- Ready to be served.
- Don't mix the dough for too long or the muffins will become sticky. Ignore if there are still lumps in the dough because they will stick together on their own when baked.
