Banana Bread French Toast
An easy Banana Bread French Toast drizzled with a Cream Cheese Glaze!

- 8 slices of bread of your choice
- 1 large banana
- 1 large egg
- 1/2 cup milk ((reduced fat; normal milk or almond milks are fine))
- 1 tablespoon granulated sweetener or sugar of choice
- 1 teaspoon ground cinnamon
- 2 teaspoons pure vanilla extract
- 1/2 cup cream cheese
- 1/4 cup Greek yogurt ((or any plain yogurt))
- 1/3 cup confectioners ((or icing) sweetener/sugar)
- *Banana slices and pecans to serve
Steps
Blend all of the French Toast ingredients in a blender, or alternatively, mash the banana with a fork, then whisk the egg, milk, sweetener/sugar, cinnamon and vanilla into it to combine really well (it's ok to have a few banana lumps in the mix).
Coat bread evenly in the egg wash.
Heat a pan with butter or cooking oil spray; fry soaked bread on low heat on both sides until golden and browned, flipping gently to turn.
Serve with the cream cheese glaze, banana slices and pecans (optional)
Combine all of the glaze ingredients together in a bowl; use a hand beater to whip until smooth.
