Ingredients

4 servings
  • 2 pounds spaghetti squash
  • 2 tablespoons butter (or olive oil)
  • salt and black pepper (to taste)

Steps

  1. Set your oven to preheat at 400°F.

  2. Slice the spaghetti squash in half lengthwise. Remove the seeds and any stringy parts and discard them, or save the seeds to roast later.

  3. Brush the cut side with oil or butter, then sprinkle with salt and pepper.

  4. On a parchment-lined baking sheet, place the squash with the cut-side facing down and bake 40 minutes or until just tender.

  5. Let it cool for 5 minutes, then turn the spaghetti squash cut-side up and use a fork to gently scrape the inside into noodle-like strands.

  6. Season with additional butter, salt and pepper if desired.
