Ingredients

4 servings
  • 8 ounces rotini (or bow tie pasta)
  • 1 cup cherry tomatoes (diced)
  • 8 slices bacon (cooked crisp and crumbled)
  • 1 g reen onion (thinly sliced)
  • 2 tablespoons chopped fresh cilantro
  • 1 avocado (diced)
  • 1 teaspoon fresh lime juice
  • 1 avocado
  • ½ lime (juiced)
  • ¼ cup chopped fresh cilantro
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ cup buttermilk
  • ¼ teaspoon salt (or to taste)
  • black pepper

Steps

  1. Place all dressing ingredients in a blender and process until smooth.

  2. Cook pasta according to package directions. Drain and run under cold water.

  3. Toss diced avocado with lime juice.

  4. Combine all ingredients in a large bowl gently toss with dressing.

  5. Refrigerate 1 hour before serving.
