Ingredients

  • 2 apples (peeled, cored and finely diced)
  • 1 cup ripe mashed bananas
  • 1 ¼ cups granulated sugar
  • 2 cups all-purpose flour
  • 2 eggs at room temperature
  • 2/3 cup unsalted butter at room temperature (10 tablespoons or 1 ¼ sticks)
  • ¼ cup buttermilk
  • 1 tsp salt
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 tsp vanilla extract
  • 1 tsp baking soda

Steps

  1. Mix together 2 cups flour, 1 tsp baking soda, 1 tsp salt, 1/2 tsp nutmeg and 1/2 tsp cinnamon.

  2. In a large mixing bowl, beat the 1 1/4 sticks of butter and 1 1/4 cups of sugar together on medium speed until it has a light and fluffy texture.

  3. Without reducing the speed, add 2 eggs one at a time, add 1 tsp vanilla extract and 1/4 cup of buttermilk.

  4. Finally, beat in the flour mixture.

  5. Use a spoon to fold in the apples and banana.

  6. Fill the lined muffin cups about half-way.

  7. Bake until toothpick inserted in the center comes out clean, about 20 to 25 minutes.
