Watermelon Peach Salad
A colorful salad that’s almost effortless to make, pretty, and so delicious...it really is summer in a salad!

Ingredients
6 servings
- 4 cups cubed watermelon
- 2 -3 peaches, cut into thin wedges
- fresh basil leaves
- 8 ounces fresh feta cheese, crumbled
- 1/4 cup roasted pistachios, chopped
- 1/4 cup extra virgin olive oil
- 3 tablespoons champagne vinegar
- 3 tablespoons honey
- 1 tablespoon fig preserves ((optional))
- 2 tablespoons chopped fresh chives
- salt and black pepper
- chili flakes
Steps

1. In a salad bowl, arrange the watermelon and peaches. Crumble the feta over the fruit. Add the basil and pistachios. 2. To make the vinaigrette. Combine all ingredients in a glass jar and shake or whisk to combine. Season with salt, pepper, and chili flakes. 3. Drizzle the vinaigrette over the salad. Enjoy!!
