Ingredients

  • 2 slices whole wheat bread (toasted)
  • 3 tablespoons plain Greek yogurt
  • 1/4 cup marinaded artichokes (chopped and patted dry)
  • 1 g reen onion (thinly sliced, about 1 1/2 tablespoons)
  • 2 slices white cheddar (provolone, harvarti, Swiss...whatever you like!)
  • Fresh spinach
  • Sliced deli turkey or chicken
  • Sliced tomatoes
  • Sliced cucumber
  • Sprouts
  • Salt and pepper
  • 1 tablespoon Basil Pesto

Steps

  1. In a small bowl, mix together the Greek yogurt, artichokes, and green onions. Spread over the bottom of one of the slices of bread.

  2. Top with the sliced cheese, spinach, turkey, tomato, cucumber, avocado, and sprouts.

  3. Spread the other slice of bread with pesto, then place on the sandwich, pesto-side down.

  4. Slice and enjoy!
