Ingredients

3 servings
  • 1 lb chicken drumsticks (chicken thighs or a combination of chicken parts, cut into pieces)
  • 2 tablespoons sesame oil (or toasted sesame oil)
  • 2 inch old ginger (peeled and cut into thin pieces)
  • 6 cloves garlic (peeled)
  • 1½ tablespoons soy sauce
  • 1½ tablespoons dark sweet soy sauce (kecap manis)
  • 1½ tablespoons Shaoxing wine
  • 1 bunch Thai basil leaves

Steps

  1. Heat a clay pot over high heat and add the sesame oil. Add the chicken and stir-fry until the surface becomes slightly crispy and golden brown.

  2. Push the chicken to one side and add the ginger and garlic. Stir-fry until aromatic, then mix well to combine.

  3. Add the soy sauce, dark sweet soy sauce, and Shaoxing wine. Mix well to combine, then cover with the lid, lower the heat, and simmer for 5-10 minutes.

  4. Add the basil leaves and stir well with the chicken. Dish out and serve immediately.
