Ingredients

6 servings
  • 1 pound penne pasta noodles, (or pasta of choice)
  • 2 cups cooked and diced chicken
  • 2 cups steamed broccoli
  • ½ cup unsalted butter
  • 2 cups heavy whipping cream
  • 4 ounces cream cheese
  • 1 cup grated parmesan cheese
  • ½ teaspoon minced garlic
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup mozzarella cheese
  • optional- shredded parmesan cheese for garnish

Steps

  1. Cook the 1 pound penne pasta noodles, according to package directions. Drain and set aside.

  2. While the pasta is cooking, make the three-cheese alfredo sauce. In a large skillet add ½ cup unsalted butter, 2 cups heavy whipping cream, and 4 ounces cream cheese. Cook over medium heat and whisk until melted. Add the 1 cup grated parmesan cheese.

  3. Add the ½ teaspoon minced garlic, 1 teaspoon garlic powder, 1 teaspoon Italian seasoning, ¼ teaspoon salt, and ¼ teaspoon pepper. Continue to whisk until smooth.

  4. Bring to a simmer and continue to cook for about 3-5 minutes or until it starts to thicken. Add 1 cup mozzarella cheese and stir until melted.

  5. Add the pasta, 2 cups cooked and diced chicken, and 2 cups steamed broccoli to the skillet and toss to coat Garnish with optional- shredded parmesan cheese for garnish cheese if desired, and serve.
