Instructions

  1. Boil the goat with bay leaves, lime leaves, lemongrass and galangal until half cooked. Remove and wash the goat meat and offal. Discard the water.
  2. Boil the goat again with new water (1.5 liters). Set aside.
  3. Heat the oil. Saute ground spices until fragrant. Remove and add to the stew.
  4. Add whole cayenne pepper. Stir well.
  5. Season with salt, sugar and sweet soy sauce. Stir well and adjust the taste. Lift.
  6. Ready to be served with a sprinkling of fried onions.
  7. The amount of cayenne pepper can be adjusted according to taste.
