Ingredients

6 servings
  • 2 tablespoons salted butter (or dairy-free butter to make it vegan)
  • 1 medium onion (chopped)
  • 1 tablespoon all purpose flour ((or GF flour))
  • 1 medium head green cabbage (cored and roughly chopped)
  • 8 cups water
  • 3 tablespoons Better Than Bouillon (Chicken or Vegetable to make it vegan)
  • Kosher salt
  • Black pepper

Steps

  1. In a large pot melt the butter and add the onion over medium-low heat. Cook, stirring until soft but not browned, about 5 minutes.

  2. Add the flour and stir about 2 minutes, to cook out.

  3. Add the water, bouillon and cabbage and set heat to medium. Bring to a boil, then cover and simmer over medium-low heat until vegetables are tender, about 20 minutes.

  4. Adjust salt and pepper, if needed.
