Ingredients

4 servings
  • 6 cups chicken broth
  • 2 slices fresh ginger (about ¼-inch each)
  • 2 tablespoons soy sauce
  • 1 teaspoon toasted sesame oil
  • ½ teaspoon garlic powder
  • 3 cups frozen stir fry vegetables (or fresh mixed vegetables*)
  • 3 package s ramen noodles (flavor packet discarded)
  • 1 pound large shrimp (peeled and deveined)
  • sliced green onions (sesame seeds, togarashi for serving, optional)

Steps

  1. In a large pot, bring broth, ginger, soy sauce, sesame oil and garlic powder to a gentle boil.

  2. Add the frozen vegetables and cook for 2 to 4 minutes.

  3. Add the ramen and shrimp and cook for 3 to 4 minutes more or until the shrimp is opaque and just cooked.

  4. Remove ginger and discard.

  5. Divide over 4 bowls and garnish with green onions, sesame seeds, or togarashi to taste.
