- 4 salmon fillets
- 1 chopped red bell pepper
- 1 chopped green bell pepper
- 1 chopped yellow pepper
- 1 chopped onion
- 1 cup snow peas
- 2 thinly sliced carrots
- ½ cup Thai sweet chili sauce
- ¼ cup soy sauce
- 1 tablespoon grated fresh ginger
- 1 tablespoon lime juice
- ½ teaspoon red pepper flakes
- Chopped cilantro and lime slices for garnish
Steps
Preheat oven to 375 degrees Fahrenheit and spray a baking sheet with non-stick cooking spray. Lay 4 salmon fillets skin side down surrounded by 1 chopped red bell pepper, 1 chopped green bell pepper, 1 chopped yellow pepper, 1 chopped onion, 1 cup snow peas, and 2 thinly sliced carrots.
In a small bowl whisk together ½ cup Thai sweet chili sauce, ¼ cup soy sauce, 1 tablespoon grated fresh ginger, 1 tablespoon lime juice, and ½ teaspoon red pepper flakes. Reserve 1/4 cup of the marinade and drizzle the rest of the marinade over the salmon and vegetables.
Cover with foil and bake for 15 minutes. Remove foil and broil for another 5-7 minutes until the top starts to blacken.
Remove salmon from the oven and brush remaining marinade on top. Garnish with fresh cilantro and lime slices of desired.
