Ingredients

4 servings
  • 4 salmon fillets
  • 1 chopped red bell pepper
  • 1 chopped green bell pepper
  • 1 chopped yellow pepper
  • 1 chopped onion
  • 1 cup snow peas
  • 2 thinly sliced carrots
  • ½ cup Thai sweet chili sauce
  • ¼ cup soy sauce
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon lime juice
  • ½ teaspoon red pepper flakes
  • Chopped cilantro and lime slices for garnish

Steps

  1. Preheat oven to 375 degrees Fahrenheit and spray a baking sheet with non-stick cooking spray. Lay 4 salmon fillets skin side down surrounded by 1 chopped red bell pepper, 1 chopped green bell pepper, 1 chopped yellow pepper, 1 chopped onion, 1 cup snow peas, and 2 thinly sliced carrots.

  2. In a small bowl whisk together ½ cup Thai sweet chili sauce, ¼ cup soy sauce, 1 tablespoon grated fresh ginger, 1 tablespoon lime juice, and ½ teaspoon red pepper flakes. Reserve 1/4 cup of the marinade and drizzle the rest of the marinade over the salmon and vegetables.

  3. Cover with foil and bake for 15 minutes. Remove foil and broil for another 5-7 minutes until the top starts to blacken.

  4. Remove salmon from the oven and brush remaining marinade on top. Garnish with fresh cilantro and lime slices of desired.
