Ingredients

  • 1 mango (peeled, pitted, and cut into small cubes)
  • 1 bunch cilantro (finely chopped)
  • 1 bunch Italian parsley (finely chopped)
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup vegetable oil (plus more for grilling)
  • 2 tablespoons lime juice
  • 2 lbs salmon fillets

Steps

  1. Stir together the mango, cilantro, parsley, red pepper flakes, oil, and lime juice. Season with salt and black pepper to taste.

  2. Preheat a grill or grill pan to medium-high heat. Lightly oil the hot grill. Season the salmon with salt and black pepper, then lightly brush it with oil. Grill the salmon, skin side up, until it begins to turn opaque, about 4 to 6 minutes.

  3. Flip the salmon and cook until opaque throughout, about 4 to 6 minutes. Transfer to a platter, spoon chimichurri over the top, and serve.
