Ingredients

3 servings
  • 1/2 pound raw skinless salmon fillet
  • 1/3 cup chopped celery
  • 1/4 cup chopped red onion
  • 1/2 lemon (juice of)
  • 1 tablespoon mayonnaise
  • 1/4 teaspoon kosher salt
  • black pepper (to taste)

Steps

  1. Cook the salmon in the microwave, covered about 2 minutes until cooked through, or use leftover cooked salmon.

  2. Flake with a fork and let it cool.

  3. Add the remaining ingredients and mix well, refrigerate up to 4 days.

  4. Serve over toast, in lettuce cups, on a salad, etc.
