Ritz Parmesan Chicken

Ingredients
- 4 boneless skinless chicken breasts
- ¼ cup mayonnaise
- 1 tablespoon lemon juice
- 30 crushed Ritz crackers (about 1 cup)
- ¼ cup parmesan cheese (grated)
- 2 teaspoons dried basil
Steps

Preheat the oven to 400 degrees Fahrenheit. Prepare a baking sheet by lining it with foil and spraying it with non-stick cooking spray.

In a small bowl mix together ¼ cup mayonnaise and 1 tablespoon lemon juice.

In a separate bowl, add 30 crushed Ritz crackers, ¼ cup parmesan cheese, and 2 teaspoons dried basil. Mix to combine.

Dredge 4 boneless skinless chicken breasts in the mayonnaise mixture and then coat them in the Ritz cracker mixture.

Place the chicken on the prepared baking sheet and bake for 20 minutes or until the chicken is cooked throughout and no longer pink.
